NEW RECIPES


Sponge Cake
I always want to have a moist, ginger and chocolate sponge cake, and just now I had baked the cake successfully,  and this is my recipe for you.
The recipe:
My Ginger and Chocolate Sponge

Ingredients

4 free-range eggs
¾ cup caster sugar
Dry ingredients
½ cup self-raising flour
¼ cup custard powder
¼ cup tapioca flour
2 teaspoons level cream of tartar
¾ teaspoon level bicarbonate soda
1teaspoon dark Dutch cocoa powder
1 teaspoon cinnamon powder
1 teaspoon ginger powder
Wet ingredients
1tablespoon golden syrup
1dessert spoon butter
You need also:
Baking paper
Two baking tin size, 20 cm

Method

Line the tin with the baking paper, butter around the sides of the tins.
Put the oven on, set it up to 160 degrees C (fan-forced oven)
Beat together, the eggs and the caster sugar, until thick and smooth, you need at least 11 minutes. In the meantime, sift the flour and all the dry ingredients a few times.
Warm the golden syrup with the butter and mix and stir
Add in the dry ingredients little by little to the egg the mixture, and mix together gently.
Stir in the golden syrup to the cake mixture, and stir, fold to combine.
Now you have a smooth and shiny of cake batter
Divide the cake batter to the prepared tins
Bake in the preheated oven for 11-12 minutes (It worked beautifully in my oven)
The sponge is cooked, take them out and let them rest for 5 minutes on the tins.
Turn the cakes out and transfer to a cooling tray.
When they are cold, join the sponge with whipped cream, drizzle the top with melted chocolate, or simply dust it with icing sugar.


The Baking Chocolate and Ginger Cake

To dress the cake is easy enough, simply spread whipped cream on one sponge, and put the other sponge on top, dust with icing powder.  Serve with extra fresh fruits.


The cake was prepared for my youngest daughter birthday, and It was decorated with meringues, fresh strawberries and fresh flowers.  Unfortunately, I did not take the photo.

Quick Mix
Bread and cheese go together very well.  I baked quick mix cheese bread with sweet potato, and it was so light and tasty.  Simply slice it and spread it with butter to serve.

The Recipe

Ingredients
1½ cup self - raising flour
¼ cup mixed tasty cheese and Parmesan
Salt and white pepper
1free range egg
1cup buttermilk
¼ cup oil
½ cup mashed sweet potato

Method
Line the tin with baking paper
Put the oven on, set to 175 degrees C
Place all ingredients in a large bowl and mix together quickly
Spoon the mixture on to the prepared tin
Bake in the preheated oven for 26-28 minutes or until golden
Take it out, and let it rest on the tin for five minutes before turning out to cool
Cool on a cooling tray
Serve warm or cold, slice and spread with butter or butter with mixed fresh herbs



Savoury Scone

Light and delicious savoury scones with cheese. 

Here the recipe.
Savoury Scones.
Makes 12-14
Ingredients
450 g self-raising flour
110 g butter
Salt
75g grated tasty cheese
Mixed fresh herbs-thyme, chives and parsley
½ cup buttermilk
½ cup milk
1 egg
Method
Put the oven on, set it up to 200 degrees C
Line a baking tray with baking pepper
On a large bowl, rub the butter with the flour thoroughly
Add in the grated cheese, salt, the mixed herbs and toss them together
Mix the egg, buttermilk and milk, stir and mix them lightly
Add in the egg mixture to the flour mix at once, and mix quickly but gently to make a soft dough
Put the dough on floured board and knead lightly
Roll it to make square dough of 2 cm thickness
Cut the dough with a scone cutter, and place them on the prepared baking tin
Bake in the preheated oven for 11 minutes until golden. 
Cool on a cooling tray
Serve warm or cold, with butter.


Fried Food
Fried food is excellent and delicious, but sometimes they are messy, and the smell of the oil can be lingering in the kitchen. However, we could have it occasionally.  I cooked fried tofu balls the other day, and it was delicious. And these are the ingredients.
The quantities:
300 g firm tofu, mashed
2 tablespoons cornflour
Salt and white pepper
2 eggs
1/3 cup vegetable oil
Two cups of mixed vegetables-carrots, spring onions and bean shoots
Mix all ingredients together
Take a tablespoon of the mixture at the time,  shape to round and fry into hot oil until golden.

Serving fried food is lovely with pickles, sauces or salad.  I love this tofu balls to be served with fresh salad and hot chilli sauce.

Salads are always excellent to garnish rich food or fried food.  These are salads with a simple dressing that I prepare for my family.
Fresh vegetable salads to garnish fried food, grilled, fish and meat.  It is winter, but you can enjoy the hot dinner with salads instead of cooked vegetables.
Cabbage And Radish Salad.
Shred white cabbage and slice radish thinly.  Mix both vegetables together and dressed with lemon juice mixed with vegetable oil, mustard and salt to taste.
Cabbage Salad
Mixed of shredded red cabbage, grated carrots, celery and apple cut in strips.  Dressed with red wine vinegar mixed with mustard and olive oil dressing
Leafy Salad
Mix any leafy vegetables-spinach, rockets, green lettuce, and dress in the simple dressing which is lemon juice mixed with white pepper, salt and oil.
