Easter Crown (Continued)


My Easter Crown is a delicious sweet bread which is served for Easter breakfast for my family and followed by a light but festive cooking.  We understand that overeating rich food in a day celebration is not acceptable. That is what I wish to do this year.

It won't be Easter time without hot cross buns, here I have the Easter buns for the Good Friday.

Another look at Easter Crown, brush the top with melted chocolate and dust with icing sugar, to make more earthy but festive, simply decorate with fresh herbs, edible flowers, chocolate eggs.

Holy Thursday.

The Crucifix orchid is in flower, the cut flowers now are inside the house for the Easter week, and Easter celebration.

Easter buns were baked,  this time the dough is based on brioche dough, no icing crosses for the buns.  But the buns are filled with sweet candy citrus, sweet currant and raisins.

After an hour from shaping, the buns are brushed with egg wash.  They are
ready for baking in a hot oven for 18 minutes.

Good Friday
Traditional for Good Friday, most people in Australia have hot cross buns.  That's what we did too, but we had the untraditional buns which I baked made of brioche dough.

The buns were based on brioche dough, it 's served warm with jam.



Holy Saturday - Religious point a view.
The last day of Lent.   Holy Saturday is the final day of Lent of Holy Week, and of the Easter Triduum the three days (Holy Thursday, Good Friday and Holy Saturday) immediately preceding Easter, during which Christians commemorate the Passion and Death of Jesus Christ and prepare for His Resurrection  (Wikip)

Preparation for the Easter Feast.
Boiled Easter eggs are for us, I do it every year, and delicious food is served too.  This year I prepared fish for the family.  It is based on Russian pie, Kulebyaka, the filling of the pie is layered spiced rice and salmon, using brioche dough for the pastry.

The prepared pie can be refrigerated for a few days, and baked on the Easter Sunday.  It is convenient, what you need to do on the day is only to prepare the sauce and garnishes.

We have The Easter Crown in the morning, the sweet for the day, it is better to be followed by a light meal.


Preparation for the Pie
Brioche dough, the filling-yellow rice, omelette,salmon, egg for brushing
the dough and the top of the pastry before baking.

The sheet of dough, omelette, rice and fresh chopped salmon.

What you need now is more omelette to cover the filling before putting another dough - pastry on top.  Make the sheet of dough slightly larger, cover the top then press the edges to close securely, decorate as you wish.  Brush the pie with egg wash and bake in a moderately hot oven at 175 degrees C for 37 - 42 minutes.
Kulebyaka is ready for baking.

This is my interpretation of the Russian pie 'Kulebyaka.  It looks dark and golden brown after it baked adequately.  Serve warm. 
We will have the pie with lemony sorrel sauce and garnish with a salad.
   
Boiled eggs for our Easter.  These are what you need: fresh eggs,  food colouring or mixed herbs and black tea leaves.  Put them in a pot add in cold water, boil in low heat for 33 minutes.  These eggs have a brownish colour, but if you wish to have patterns on the eggs, specific procedures have to be taken.
The dressed eggs are ready to boil.
Get small leaves, such as mints or lemon balms, place on the egg, wrap in with old stocking to hold them and tighten up properly.

The fresh eggs look so cute before boiling.  Remember that you have to cook them on a low temperature; otherwise, the eggs will crack.

 When the eggs are cold, take them out from the cases, open and discard the leaves, let them dry.  Present them as you wish, on a basket or place them on the Easter Crown.
