Stuffed Squash (Continued)

Braised Stuffed Giant Squash

Fresh Golden Squash from Irene's garden, stuffed with vegetables, risone and cheese, braised in very slow heat.  It is a delicious and flavoursome vegetarian dish.  The ingredients of the stuffing can be varied, it is up to anyone's taste.  Stuffed with meat, herbs, tomato and rice for the non-vegetarian.

I was very excited to prepare the dish, to this fresh homegrown vegetables I didn't need to do much.  Cook it simple with the right combination of ingredients.   For the stuffing, I got some silver beets from my garden, I chopped the stems, sautéd with olive oil until cooked.  I added some risone, grated tasty cheese. Using my latest kitchen gadget, I cut fresh garlic chives to add for extra flavour.

Using a heavy based pot, I braised the stuffed squash for 5 minutes over high heat, reduced to very low heat and continued braising for 45 minutes.  It was so flavoursome a vegetarian dish, it tasted so fresh, clean and delicious.  I served with mini herb bread with nuts, it was good to mop up the juices.

Step By Step How To Do

A whole large squash, cut into two, scoop the inside to clean top and bottom, place in a pot, sprinkle with grated cheese.





Fill the cavity with the filling, put the top squash for the lid, add 1/2 cup water, chives, a dash of oil, and cover the pot.



Braise on high heat for 5 minutes, open to check for enough liquid, cover and braise over low heat for 45 minutes.





Get the carrots and mushroom ready, the squash is cooked, take it out, leave the juice to braise the carrots,  the mushroom.
