Pizza

Non-Baked Oven Pizza


A very great pizza, it's cooked on top of a stove, and it's finished off under the grill, instead of in an oven.  It was just an idea, sometimes it is not necessary to light the stove on just for cooking or baking for a small dish. 


Pizza with anchovies, olives and Parmesan Topping.

The ingredients: For the base, you need flour, yeast, salt, sugar, oil and warm water. 

The topping is as you like it. 

I did two: one with ham, asparagus, tomatoes and cheese topping, and the second one, with anchovies, olives, green tomatoes and Parmesan cheese topping.

Pizza is so versatile, which is why it is so popular.   It can be served for lunch,  dinner or supper.


The Dough for Pizza
Makes 2

Ingredients

2 cups full plain flour
7 g dried yeast
1 teaspoon sugar and 1 pinch of salt
2/3 cup warm water
1 tablespoon oil

Method


Combine the flour, salt and sugar in a large bowl and make a well in the centre.  Add the yeast and oil.  Add in the warm water, mix until combined.  Use your hands to bring the dough together in the bowl.
Turn the dough onto a lightly floured surface and knead for 8 minutes or until smooth.  Place in a bowl, cover with plastic wrap and set aside in a warm, draft-free place to rise until the dough doubles in size about one hour or more.
After one hour, the dough has risen but not doubled.

Topping for the Pizza

1 red tomato, sliced
1/4 red onion, sliced
2 stalks asparagus, chopped
Smoked ham, sliced
85 g tasty cheese, grated, or mozzarella
1 tablespoon full Parmesan
Tomato sauce, and olive oil

The dough is very slow to rise with this process.  You could mix the yeast, sugar and water then let it rest for a few minutes.  Maybe it can help speed up the rising of the dough, it could rise into doubled in bulk within one hour or even less, in a warm place.

Preparation and To cook the Pizza.

Punch the dough down, knead it lightly, roll the dough into a flat thin round.  Place some Parmesan cheese around the edge of the pizza dough about 5 cm inward, roll the sides of the mixture in to cover and
enclose the cheese.

 Now you have a flat thin round dough with thick edges.

Transfer this dough to a heavy-based oiled fry pan.
Add some tomato sauce, spread evenly to cover the surface of the dough
Place the topping, end up with onions,  the cheese on the very top
Drizzle with oil and add some herbs
Put the pan on a stove,  cook over hot heat for 3 minutes,  cover with a lid, lower the temperature and continue cooking  for another 7 minutes
Take the top off, lift the pizza off the frying pan, transfer and place it on a tray,
 cook under a hot grill for 2-3 minutes.


The whole process of cooking a pizza takes about 13 - 14 minutes, the baking time
for the traditional pizza is approximately 10 -11 minutes

 This pizza is for the thin based pizza.  The nontraditional cooking method is secure and comfortable,  It is a short cut technique and energy saving.
