Ayam Panggang-Grilled Chicken
 Sweets, savouries, delicious food, lovely flavours, amazing dishes from everywhere are available in this country, Australia. The desserts: cakes, puddings, pastries, and the savouries: from pasta, bread,  chop suey, sausages,  BBQ, to  Grand Roasts with the trimmings and so on.   I cook those dishes and loving them.  But when I am tired, I long for the food that I was used to.  Nothing like your first food that your parents introduced to you when you were little.
 

 At my parents' house, my mother particularly loved this dish, it is a chicken dish-Ayam Berek, she did not cook it because she could get it from the shop.  Every time she bought the chicken, it was a treat for all us kids.  Ayam Berek is a sweet but spiced whole fried chicken, it is served with rice and a salad.

Today I am sharing a simple cooking method of a whole chicken, baked and grilled, but it is straightforward, and the result is you have a succulent, juicy and tender chicken.  It is an adaptation of grilled chicken Javanese style-Ayam panggang for main meals.  Traditionally it is grilled over charcoal, cooked outside.


Step By Step
Add chopped chives and garlic then bake for 33 minutes

Reserve the leftover marinade, chopped cooked onion

Mix the marinate and cooked onion together

After baking for 33 minutes

Turn it over, spread the onion mixture over it
Grilled under lower heat at 175 degrees C
for 22 minutes until golden.
Freshly Cooked  Ayam Pangang

Ayam Panggang - Grilled Chicken

1 young chicken-1.3 kg
Marinade Ingredients:
2 tablespoons tamarind pulp
1 teaspoon sugar
1 tablespoon sweet and salty soy sauce
1 teaspoon salt
 Herbs and spices: fresh chives, garlic and onion, sliced thinly
Method
Wash the raw chicken, cut in halves
Place marinade ingredients in a large bowl (make sure it fits for the chicken)
Put the chicken in and rub in the marinate onto it, cover with plastic wrap
Refrigerate the chicken for overnight, take it out one hour before cooking time
Cooking:
Heat the oven up to 200 degrees C
Place the chicken, on a baking rack, skin down and bake for 33 minutes.
Turn it over, then switch the oven into the grill mode, lower the heat down to 175 degree
Grill the chicken for 22 minutes until golden brown. (I keep the chicken in the oven until serving time)
To serve:
Serve hot or room temperature with steamed white rice,  a side salad and sambal

This is my method of cooking, bake the chicken halfway then follow by grilling,  until the chicken cooks in perfection.

I burnt it a bit, the colour is rather darkish, instead of golden brown, I forgot to lower the heat down to 175 C, while I was grilling it instead it kept on cooking at the same temperature.  But the taste was excellent and delicious.  The chicken was juicy and succulent




I am home every time I have this dish.  It is sweet and straightforward.
