Baked Dinners

Baked Stuffed Tomatoes and Mini Pot Pies.

Easy baked dinner, practical and time-saving.

Baked Stuffed Tomatoes: 
Red and ripe tomatoes, stuffed with braised meat, rice and vegetables, or stuffed with braised chickpeas, mushrooms, carrots, for vegetarian. 
The baking time is not very long as the stuffing is cooked.  I baked over medium heat, 175 degrees C for 50 minutes, but I keep it in the oven for one hour also.  I like to serve this dish warm.  There is no recipe for it, everyone can improvise, use any ingredients for the filling.

Mini Potted Pie is another easy baked dinner.  It makes the best of leftovers. 
Any casseroles, mince sauce, meatballs leftover are suitable for the mini potted pies.  And of course, you can make everything fresh from scratch instead of leftovers.

My two mini pot pies consist of braised meatballs, green beans, carrots,  I added some chopped smoked ham, fresh egg, herbs, topped it up with sliced sweet peeled potatoes, bay leaf powder, a dash of olive oil. Bake in 175 degrees oven for 25 minutes.  I like the egg cooked well.

Add fresh eggs, and sliced potatoes, herbs and drizzle some oil
Cover the pots and bake in hot oven 175 degrees for 25 minutes

 It is not the traditional pie for sure, no pastry and no mashed potatoes for the crust,  a potted pie, served straight from the pot, keeps the dish hot.   A leafy salad to go with it.
Practical cooking that you can have at any day, more so on a more relaxed day.
